The Denver steak is a lesser-known steak from the flunken muscle in the shoulder. While you might not be familiar with the flunken cut of beef, it shares the same characteristics as short ribs, its close cousin. Denver steaks are iconic for their versatility, beefy flavor, and tender texture.

A Denver steak is also the perfect cut for Korean BBQ: marinate and slice into approximately quarter-inch thick slices for quick and even cooking.

If cooked as a steak, use medium heat to give the marbling time to render - treat it more like a bavette steak than a quick-searing skirt steak.
